Lima Beans

I know this title sounds underwhelming.  It's not.  Honestly, this dish is one of my favorite things in life.  Less than five ingredients.  Pure bliss. 



I first saw this recipe on Orangette. It was way back in 2008, and even with the election mention, these beans were totally worth any annoyance.  I like to use fresh limas, just because I think they've got to be better than frozen - but use what you have.

The ingredients are: beans, water, salt, pepper, butter, and cream.  That's it.  Simmer the beans in water until tender and then after draining let them swim in cream and butter.  These beans are velvety, rich, and totally satisfying.  I could have eaten the whole bowl, but my dad loves these as much as I do - guess I'll share.

  1. let me just say that I can't stand lima beans, but I will give this a try. everyone else will love it I'm sure.

  2. I like Lima beans but very rarely find them fresh, and the only time I tried using the frozen ones they were not very nice. Not sure whether that was my fault or the beans!!!
